Some items are not automatically synched by iTunes and don’t have any backup or manual way to add them on to your iPhone.

Notes- if you use these notes, they aren’t backed up.  Email yourself a copy before restoring.  The sucky part is that you can’t get the data back into the Notes section without re-typing.  [...]
