Ginger Syrup

yield 3/4 – 1 Cup
Ingredients
1 lb ginger
1/4 C honey
1/4 C sugar
1 C water
Directions
1. Peel ginger and cut into 2″ chunks
2. Combine all ingredients in a pan
3. Set heat to medium-high and bring to a boil
4. Reduce heat and simmer until reduced
